Recipe Review: Chocolate Avocado Blueberry Muffins from Paleo Hacks

 
WEEKEND, soo good to see you! This week has been really productive, and I’m pretty pumped for Daylight savings to end this weekend – more sunlight later into the night, wooohoo.
 
Today’s all about muffins – muffins, muffins, muffins. The first time I made these babies was a couple of weeks ago, and they were super moist and bursting with flavor. However, I forgot to store them in the refrigerator/freezer, and they went bad (after I had only eaten TWO of them!). Alas (that seemed like a perfect place to use that word, haha), I’ve been daydreaming of these muffins for the past couple of weeks.
 
This past Sunday, I went on a meal prep frenzy, and during that time I made these chocolate avocado blueberry muffins.

Prep work

Muffins are usually pretty easy to prepare, and these were no different. Note: since this is a paleo recipe, it is important to ensure that you have all the necessary ingredients to make these muffins as called for. Luckily, I had everything I needed on hand except for almond flour, which I went to the store and got the day before I baked these treats.

Texture

Because I like most baked goods a little gooey, I usually bake them a few minutes less than the recommended time. For these muffins, I baked them for 15 minutes, then checked them by sticking a toothpick inside the middle muffin, and there was still batter residue so I popped them back in for 2 more minutes. Once I popped the muffins out of the oven and let them cool, I excitedly tried one.
 
The first batch that I made had a slight heaviness to them, they were quite moist still. This second batch turned out drier, slightly fluffier, and had a grainier 

Flavor

The blueberries give the muffins a surprising burst of tartness mixed with the richness of the chocolate chips. I didn’t quite love the tartness + richness combination, so for the second batch I just used the chocolate chips and didn’t add in the blueberries. I enjoyed the flavor of the second batch more, but the muffins were drier without the blueberries. I think I’ll try making a third batch and will play around with the ingredients a little bit.
